Wholemeal Cheese Bun 全麦奶酪面包

I’m started my lose weight program recently
But I’m a BREAD LOVER ofcause I also needed to bake for my girls
So I try to bake wholemeal bread now
When I enjoy it can less guilty haha

This time I referenced a Facebook blogger Jess Go recipe, I modified some ingredient and change to THERMOMIX recipe.

A lot people think that Wholemeal breat is just put in WHOLEMEAL FLOUR to replace BREAD FLOUR from the recipe. But in fact, WHOLEMEAL FLOUR has poor water absorption compare from BREAD FLOUR.

If directly replaced, dough will be very wet and unable clumpy. Unless the experience is very good in baking otherwise it will 99% fail.

Here I sharing the recipe hope everyone can make it easier.

210G Cold Milk
1pc Egg (35G)
3G Instant Yeast
50G Sugar
260G High Protein Flour / Bread Flour
80G Low Protein Flour / Cake Flour
60G Wholemeal Flour
16G Milk Powder (Optional)

40G Unsalted Butter

Grating CHEESE + Raw Sugar

1All in all Ingredient A 30 sec /-/0-3-6/
2Choose Dough Mode 3minX
3Put in Ingredient B 3minX
4Pour out the dough and knead it into a round dough for 10 minutes
5Divide the dough into 4 pieces and knead them into oval shapes, save a part of each oval shape and divide into 3 pieces and tie them into braids
6Put it in the oven and ferment to 2 times for about 1 hour before taking it out. Preheat the oven to 180°C, sprinkle CHEESE and coarse sugar on the bread
7Bake in the oven at 180°C for 20-25 minutes
